Where do I find the dialog?

On the toolbar, select the Gemini Terrain Settings icon and then Excavation: Options under Project Presentation.

With the option Draw masses as volumes in 3D view, mass types are visualized with vertical planes using the density for mass display that you have set in the excavation.
